You need (assuming you mean a fighter pilot)--
Good marks to get into University, preferably RMC
Good eyesight
Good health
Preferably under 6'0"
Fast reflexes
High G tolerances
A lot of luck, especially if you want to be in the Canadian Air Force. Planes are few and candidates are many.

That last roll was awesome ... and whatever the Americans might think about the French -- they still make some of the best (and best looking) military aircraft in the world.
